I almost had this done with a Ford Transit Connect.
The Ford dealer was going to do it, so no problems with any legalities/insurance.
You'd really need to have a van with a side loading door.
As it was, I ended up buying something else.

I have a VW T5 which was converted from a panel van to a window van , didn't have to have checks , but the MOT will check the seat and belts ect
I had to send before and after pictures to the DVLA to get the VAN reclassified , as a window van the speed limits are higher , and then insure it as a window van
