Are you shopping or staying overnight? There's the usual array of Harvey Nics and the like bang in the centre... I've only ever been there through visiting the MEN area but have never found parking a problem as there's loads of NCP car parks dotted around the place.

Parking is not particularly cheap but there are plenty of car parks.
A good land mark is the arndale centre to get your bearings. Most of the shops are in or around there within 5 minutes walk. There is selfridges and Harvey Nichols near there and plenty of other designer shops.

You wouldn't want to go to Man City, they'll be a bit miserable at present.

Rochdale road car park.....£1 for all day parking. 15 minutes walk to the city centre. Easy to get to. Personally i'd drive.

Regarding designer shops, they have the largest Hugo Boss store in the UK, as well as the normal stuff. King Street is where you want to be.
Manchester City Centre is pretty good for shopping, all fairly compact. There is also a Selfridges store in the centre and the Arndale centre.
There is also a huge TKMaxx, if you are prepared to sift through the rubbish.
