I think pulling back is throttle
Pushing forward is braking
Flick to the left is hydraulic handbrake
Gear selection seems to be elbow to right to change up and over to the left down shifts
Check out the linkages towards the back of his elbow

I read somewhere that in some circumstances using hand controls can actually give you an advantage. Alex Zanardi lost his legs in an indy car crash and races in the WTCC and he says that in the wet he feels he has more control over the others using pedals.
