Default Road tax, can I Pay for a month?

My tax runs out the end of the month, can I tax the car for six months, via direct debit, then cancel it,after one payment, ie only pay for one months tax

Just set it up to pay monthly, you don't have to do 6 months anymore.

I just buy 12 months, then SORN the car at the end of the month, I then automatically get sent a cheque for the 11 months unused.

If you buy 12 months you get more money back/month than if you buy 6 months which has a handling fee. However, you can do the same with 6 months.

I don't go near the DD options.

Set up a monthly direct debit, Then after a month just log into online banking and cancel the direct debit.

Just cancelling the Direct debit does work, We do it that way to tax cars that we use at work.
