Can anyone recommend a decent garage that has a good stock of Impreza's
for sale, closer to Essex the better

Privets always better mate. Specialists usually do little more then add a grand or two in return for a warranty thats usually not worth the paper its written on.
All the best bargains are to be had privately. But beware! Go for a long test drive and check all gears at all revs. Had "banter" on here before about some guy claiming. "id not let you thrash my car on a test drive"
well simply he'd be finding some other mug to sell to. Too many story's about ppl not testing Scooby's properly and then having major problems the first time they rag it!

With the engine and box up to temp id have no issue with a genuine buyer giving it the beans if he came with the cash in hand!

So you'd let some joe that you don't know and you have no idea about how good a driver he is or even if he's ever driven anything other than his mums 1.1 ford fiesta bounce your £9k 300+ bhp Subaru off the limiter solely on the basis he's got a few quid in his pocket.

I'll be on the lookout for when you're selling your car and pop round for a nice gear crunching, limiter bouncing joy ride.
