Doh! obviously got my Ports and my Ply's mixed up.... anyway they're down there where they all talk funny and **** sheep.
They may not be the cheapest but they are one of the very best out there... do it right, do it once... get it wrong and it will make them look very cheap indeed.

first things first, whats the condition of the car? you say restoration which suggests it needs a lot of work? hows the bodywork, paint and engine? rust is a big factor on subarus at rear arches and rear strut towers especially at that vintage. you cant get sills for them either so you will need some welding skills if any of these areas need attention. also the engine might need a rebuild depending on how its running and has been treated, unless it has an extensive service history and has low miles. even then you would probably want to do the tensioners, idlers and cam belt, fresh oil and filter, drop the coolant and refresh that as well. also air filter and plugs. then theres the gearbox and diff oils as well to freshen up. the brakes will probably need looked at if sat for any length of time as well. possibly would need disks and pads at minimum and refresh the brake fluid as well. brake lines might need replaced if perished also. the calipers might also need refurbed as the seals can go on them as well leading to sticky calipers. suspension will be tired if still origional as well and would need inspected and bushes, drop links and shocks replaced as needed. this all depends on the condition of the car your refering to of course. if its been a running car on the road then the engine will most likely be fine as long as its not smoking, burning oil or makes any nasty clunks and bangs. great project if you have a garage/driveway to do it and are handy with the spanners. and to be doing it with your son just adds to the experience. there are lots of knowledgeable guys in here who can answer questions you might have as you progress with it, good luck with it.

Ok I'm man enough to admit geography was never a strong subject for me... but I do know the difference between Portsmouth and Plymouth just getting confused in my old age.
I'm reasonable with electrics though, running wires, fitting switches and light fittings... even been known to fix the odd appliance... and at least I know the difference between 12v & 240v mind you I do have curly hair.
