Default Expansion tank keeps filling up

My expansion tank keeps filling up this happened in the summer in the hot spell my mechanic mate said it's happening to a lot of cars it's the heat take out thermostat and let the water run freely but be sure to put it back in for winter. So when time came I put a brand new one in from subaru have probably done about 6k miles since its been in and is now starting to do the same any ideas what's causing this to happen
