I have never had an Impreza before and wanted to try one, watched a few vids online of these and I think they will suit me.

They have both been for sale for a while, is it because they are quite a niche car and a high price tag?

Yes, you've answered your own question really. There's not many people willing to pay 15-16k on a 16/17 year old Subaru.

Those that do are unlikely to use them as daily drivers these days.
