I am about to have my stolen/recovered scoob returned to me on Saturday. It has had, amongst other things...

- dashboard repair (from a hole that was drilled into it)
-steering column & shroud replacement
-lock set
-new drivers door skin
-complete respray (excluding roof)

Can anyone give me any tips on checking the quality of the above work.
Is their an idiot proof way of checking if the spray job will pass more than an idots gaze. (you guessed it i'm an idiot!)

Am I within my rights to reject any of the work the repairer has carried out, (poxy ford dealer), and demand it be redone. If the dash repair is duff am I within my rights to demand a new dash??

I guess tyres cannot be claimed for on the insurance.

If their is any mechanical (i.e. engine) damage/strange noises, can these be fixed via the insurance company. Does my subaru warranty still stand (approx 6 months left)?

Unfortunately, the paint job will never be as good as when it came out of the factory. A trained eye will always be able to spot the respray. Not too helpful I know, but just in case you weren't aware.
If it was expensive rubber, I see no reason why you shouldn't be able to claim.
As for the rest, I don't know.

If it's had a complete respreay i would have expected some panel replacement as well, I mean what did the theiving scum do to it?
If your trying to find fault with it you could take the car to another dealer and ask to borrow their paint thinkness tester(if they have one) Also spend a lot of time looking at the car in various lights as some problems don't show up in all lights (eg the repair/repray I did to my mums Uno looked fine in all lights apart from sodium streetlights)
