Is it better to map an ecu on the rollers or out on the open road ? I have the option to do either at 2 different mapping places. What are the pro's + con's ?

IMHO out on the open road as the map would be tailored to typical driving conditions, intercooler airflow, etc.
Whilst you can try and replicate this on the rollers it's never going to be quite the same as actually driving.
However one advantage of using rollers is you don't have to do flat out runs on the road thus putting your license at risk.
