how much is too much?

Just had my car given its first service, I thought that it would be a good idea to check the oil level today as the car was totally cold,as had not been used since getting back from the service being carried out on Friday.
Took the dipstick out turned it round the right way and wiped it, put it back in waited 10 seconds and pulled it out and the oil is up to the first twisty bit past the F Mark and the drilled hole! Checked once more just to make sure and yes it is at the same level again with the car being on level ground.
Luckily I had been taking it easy on the way home as I have had some new brakes fitted at the same time as the service was carried out, so was not taking the engine to high revs.
Could anyone give me an idea as to how much I will need to drain out to get the oil at the right level? Which is the right level as well when totally cold the F Mark or the drilled hole? Also will I need to change the sump nut washer? If I do need to change the washer is it a Subaru specific design of crush washer?
