Of course they do (some).
I remember someone who told me, xxx mapped his car and wanted to abort and not map his car any further as it was too powerfull, the guy wanted more power and mapper told him ooooh nooooo!
Going back quite a while though

Bobs mapped mine a few times both with me driving & with one of my mates driving. We both agreed afterwards that we were far more scared than he was. The phrase nerves of steel was mentioned.

I used to do a lot of road mapping.. never bothered me in the slightest.. I was more concerned when stuff like asking someone to drive normally to let the engine warm up having just installed a new ecu and a base map and they start bringing it on boost etc.. lol
So started giving a pep talk before going out mapping
Then a few things happened and specially Rob Gallagher was killed in the passenger seat of a skyline whilst possibly mapping, just highlighted that not just talking car damage and a bit of time in hospital but we aren't immortal.
From that point on I have been a lot more careful and try and keep speed to a minimum, and choose a particular road for it that if something were to happen you are going to be okay. A car can be setup and mapped without going silly speeds.. however if the car is high powered then its just much more sensible on a dyno with knowledge of the different environment the car lives in and then check it after, repeatable comparisons, fault finding easy, quicker, safer.
We all drive these cars and know what they are capable of and its inevitable that they are capable of going a lot faster than is necessary in a lot of road conditions.

We don't get frightened because we don't allow it to happen.
Customers are paying us to map the car, and they shouldn't be subjected to risk, either for the car or themselves or indeed anyone else going about their business.
I've heard a number of stories from customers about their experiences, with at least one saying the mapper was cross with him for not going over 100mph on a busy public road!
Only once was I ever scared by a customer, who drove like he stole it on what was supposed to be a demo of a problem. It didn't last, as I just applied the handbrake very hard indeed. He then got a lecture as to which of us the racing driver was. (it was I)..
