I just used brake cleaner and a wire brush, and then spray hammerite, smooth! and if you don't want the hassle of re-doing the letters, wipe the black paint off with some thinners, revealing the white below!

yep, Hammerite is the way to go, much cheaper than 'proper' caliper paint. I found that attaching one of those wire brush bits to the drill saved about 2 hours of work! (but that was taking old paint off, the first time round just brush all the crap off and wash it with brake cleaner)

The Subaru letting is the hardest part, and to be honest you might be happy with the results of a nice new coat of black paint. If you want to do the letting there are several ways, all of which are a complete nightmare. I've just done mine for the second time and I ended up using an old stanley knife blade to scrape the surface of the letting, therefore removing most of the 'undercoat' as it were.

Basically it's just patience, I haven't found a quicker way yet, the more time you spend doing it (with a very small brush!) the better it will look.

I've just gone from black and white to bright yellow with black letting, for that tarty git look

I did the lettering on mine by hand with a small modelling paint brush, with good results. As the lettering is raised, you could try using a block of wood, spreading some paint on it and rubbing it against the lettering, just don't overdo it with the paint.
