Disc & pad upgrade for 2 pots - advice please!

The front discs and pads need replacing shortly on my 95 WRX. Unfortunately, although I would like to upgrade to 4 pots, the 16" RAYS wheels I have (I love these wheels & don't want to change them) won't clear the calipers, so any advice please?
I'm not especially hard on the brakes, but I'm doing a 'driver improvement' day at Wroughton airfield in May, so I need them sorting my then.
I was thinking of EBC discs and Greenstuff pads, but Ollie Clark says I should go for standard discs & Mintex 1144's and better fluid.
Any advice gratefully received.

I have a 95WRX and had to replace the front discs and pads straight away so unfortunately I can't compare to OE ones, but after speaking to Pete at Scoobysport I opted for Pagid grooved discs and Pagid blue pads. My criteria was quite a lot of "spirited" drives and the odd track day a year.
All I can say is that I've had no complaints yet and they are silent (if thats any use). The only time I used them on track was at trax2000 where 7 international laps of Silverstone resulted in zero brake fade, and I have'nt got braided hoses yet.
