Offset and tyres for 17" alloys without rubbing

Offset and tyres for 17" alloys without rubbing
Hello,
I've decided to go for 17 inch alloys for my 2000 classic.
Standard suspension just now but I may lower it 1 inch in the future
Should I go for 7 or 7.5 inch width and 215 X 40 or 45 aspect ratio
Also is there a specific offset which causes the rubbing problems which I have read about in other threads, I believe the standard car is 53 offset
I want to go and get a set of wheels tomorrow so any advice would be great

I've got 215/40 on my my00, P1's use 205/45's but i don't think there a lot of difference between them. Not sure about offsets coz mine are wrong had to use spacers to clear front calipers.
