Brake fluid change

Due to welding a caliper piston to a brake pad backing plate (unknowingly, whilst on track!) I've now lost alot of brake fluid (its dissapeared completely out of the reservoir).
I've found alot of threads on how to change fluid by topping up on top of old fluid but nothing on how to refill an empty system. Does anyone know how this should be done?
Some articles warn of not allowing the fluid to fully exit the system but don't say why, so information on this would be useful too.
I'm happy to take the car to a garage to let them do it but I don't want to do any damage to the brake system by driving it with too little fluid in.

The procedure is just the same, fill the reservoir and bleed each caliper. The thing about not letting the reservoir empty is so new air doesn't get in the system and you have to start all over again.
