I was wondering what pressure you guys run on your S-tires when racing your cars on track events? What pressure (F/R) makes the car understeer less?

Geometry alters understeer, tyre pressures are a fine adjustment, harder pressures = less give in the sidewalls, I use +6 psi at both ends. Mainly to reduce the tyre flopping off the rim under heavy load. The reduced grip means a longer lifespan.

Subaru used to recommend 33psi on the front and 32 on the rear for classic WRX's, but that's for normal tires... The the people at Whiteline did some testing and foud out that with 37 psi in the front tyres and 32 psi in the rears, turn-in was a lot sharper and there was less understeer... But again, that's with normal tires (Toyo Proxis, I think)...
