Default widest tyres on a classic

I've been told by several people (including tyre/wheel suppliers) that 215 tyres on a 17" rim are the widest tyres you can put on a classic.
I am not especially bothered about wheel size but would like wider tyres to get more grip as the 205 Eagle f1s I have on 16" don't give enough grip round the bends.
Now to my mind I cannot believe changing from 205 to 215 is enough to make much difference to grip, just to my wallet.
I was thinking more along the lines of 235 or at least 225 to make it worthwhile.
I understand the need to maintain the current rolling radius to protect the diff etc. but I have checked online and found tyres in 16" and 17" that will do this and are 225 or wider.
So what is fact on a classic?
